Dream Menu
The venue map
Every venue named by a guest on the Dream Menu interview series, from Glasgow to Singapore, and the dishes they named it for.
Data to 3 October 2026 · 1,345 responses
782 venues, named by the Dream Menu community. Use Find the best… to rank them by what people actually recommend, then filter by territory.
The dish rankings below are the response data's own category counts, reproduced in full and in order. Every guest names a dream starter, main, side, dessert and drink. Tap a category under "Browse the map" to pull the venues that logged it.
Most popular dishes: all 1,175 interviews, ranked
Counts and share of all responses, matching the response spreadsheet exactly. Answers too vague to classify are the only rows omitted.
Where guests send people next: venue types
Each guest names the next stop on the dining scene. Recommendation counts by venue type, from the response spreadsheet.

Alongside the main interview series, Dream Menu runs an operator survey, venue-side interviews and themed one-off surveys. These are small, fast samples (tens of responses, not the 1,175 behind the main dataset), so read them as flavour and direction, not hard market share.

The supply side of the same market: owners, chefs and managers on how trading is going. From the 2026 Look Ahead survey. With a base this size the bars show counts, not percentages.
Supplier pricing over the last 4 weeks
Pressures named as most significant
Actions taken in the last 3–6 months
Early warning signs locally
Support that would make the biggest difference
For a distributor: 47 of the 53 who answered see supplier prices rising, 26 of them fast. 26 have already changed or renegotiated suppliers and 23 have cut their menus back, so range and price are both live conversations.
Confidence runs ahead of conditions: trading is rated 4.9 out of 10 and the next three months are hard to call (3.0/10), yet confidence for those same months is 6.5. 16 are trading better than a year ago and 22 worse; 18 call their local sector deteriorating.
In their own words: the single issue that worries them most
“Rising costs but feel unable to pass cost onto the customer.” Café / bakery
“Footfall is worrying because it's dropping or becoming unpredictable, and that directly hits revenue.” Restaurant
The one action that made the biggest difference
“The lunch menu has taken off since introducing a 3 course for £30 sort of deal.” Restaurant
“Supplier negotiation and building a good rapport with suppliers as well as collabs with other brands have helped so much.” Café and events
What they would say to decision makers
“People are still dining out, but they're holding back, trading down, or skipping extras.” Restaurant
“Customers won't just keep paying higher prices. So to keep prices down, you either take the hit or reduce quality.” Restaurant
By format and trajectory: restaurants rate trading lowest (4.2/10, n=19), cafés and bakeries 5.1 (n=15). Operators trading better than last year give the next 12 months 7.4; those trading worse give 4.6. The open answers are coded into themes by keyword; quotes are anonymised and shown with the format only.
Venue voices · 64 chefs and owners · Sept 2025 – Jul 2026
The people who write the menus, talking about their own food. Bars count how many of them used each term (a keyword tally, one count per answer).
Their menu in three words
If they could cook with one protein
One carb
One herb
One spice
The hidden-gem ingredient they would tell other cooks about
The signal: venison is as popular a chef's protein as beef or pork (8 of 58), yet game, venison and duck together make up only 34 of 1,175 diners' dream mains. Chefs want to cook it more than guests think to order it, which makes it a menu and merchandising opportunity. Potato is the clear first carb, coriander the first herb, and the hidden-gem answers lean on umami shortcuts: MSG, dashi, miso.
Where chefs send people next: Cail Bruich, Loma, Elements, The Torridon were each named more than once.
Early signals · newer questions · since Aug 2026
Two questions added to the interview in August 2026. The bases are small (76 and 74 answers), so read these as the first look at what the next quarters will track.
Food trends guests want to see more of
Dream alcoholic drink (the drink family named first)
The signal: appetite runs towards East and South-East Asian flavours (ube, pandan, Japanese teas, Korean barbecue), local and Scottish produce, and nostalgic dishes. On drinks, stirred classics (negroni, martini, old fashioned) lead, signature cocktails and wine follow, and one in fifteen asks for no or low alcohol.
Dream Fringe · 52 responses · Jul–Aug 2026
Edinburgh Festival Fringe edition, run with performers, producers and Fringe regulars. Where they drink, eat and see shows.
Fringe bars named
Venue preference: the intimate room wins overwhelmingly: small, low-ceilinged, often underground. Theatre, outdoor and arena settings trail well behind. Repeatedly described as dark, cramped and slightly unsound; that is the compliment.
Fringe fuel: coffee first and in volume, then water and electrolytes, with a protein bar or pastry as the day goes on. Energy drinks and meal deals feature heavily.
Late-night orders: chips with cheese and curry sauce is the single most repeated answer, followed by kebabs, shawarma wraps, pizza slices and loaded fries.
Edinburgh food venues named by Fringe respondents: Mary's Milk Bar, Mosque Kitchen, Palmyra Pizza, Nile Valley, Civerino's, Origin Coffee, Buffalo Truck, Wings, Ting Thai, Oink, Tempting Tattie, The Clamshell, Frites, Cargo Spud, Umai, Petra, Home Bakery, Stories Bakery, The Bow Bar, Kebab Mahal, Captain's Bar, The Tipsy Midgie, Noodles & Dumplings, Cafe Piccante, Amorino, Bistro Coco, Contini Cannonball, Jarvis Pickle, Yum Yum Kebab House, Alby's, Pizza Geeks, Bucks Bar, £2 Pizza Slice, Hajar Shawarma (Leven St), Bowls on Forrest Road, Pizza Paradise, Snax Cafe, The Haggis Box, The Piemaker, Preacher's Patisserie, Satoru, The Waverley Bar.
Dream Cocktail · Jun 2026
Respondents build a cocktail from base spirit to garnish. Directly relevant to drinks range planning.
The signal: agave and rum lead the base spirits, well ahead of gin, a reversal of the gin-led decade. Scotch appears, but as a cocktail base rather than a dram.
Rims and wild cards are the fixation: Tajín, chilli, smoked and flavoured salts recur constantly, alongside genuinely left-field savoury elements: miso, gochujang, Marmite, beef-fat caramel, smoked chicken-skin salt, brine. Sweet-only cocktails are rare; almost every entry pairs sweetness with salt, smoke, acid or heat.
Format: highballs and rocks glasses dominate over coupes. Long and refreshing or short and punchy, with very little in between.
Dream Sandwich · Apr–May 2026
Sandwiches built from the bread up, plus an iced-latte build: a useful cafe and daytime-trade companion to the cocktail set.
The signal: enriched and crusty breads beat plain sliced entirely: brioche, focaccia, sourdough, ciabatta and the Scottish morning roll. Provolone and mozzarella outpace cheddar.
The crunch rule: nearly every entry adds a fried or crisp element inside the sandwich: potato scones, hash browns, crisps, plantain chips, croquettes, crispy shallots. Texture contrast is the near-universal design principle.
Heat and pickle: hot honey, gochujang, chimichurri, scotch bonnet and jerk sauces recur, almost always balanced by something pickled.

How far to trust each number
Figures are graded by how much interpretation sits between the response and the number.
A Straight from the responses
Counted with no interpretation. Quotable without qualification.
- Course rankings across all 1,175 interviews (starters, mains, sides, desserts, drinks), reproduced in the Trends tab in full and in order.
- Venue-type recommendations: what kind of place guests send people to next.
- Response counts and dates for every survey.
Each course totals under 1,175 because blank answers and answers filed as "Other" (too varied to sit in a named category) are left out of the ranking: starters 992 · mains 1,044 · sides 987 · desserts 1,062 · drinks 1,015. Drinks count the original single "dream drink" question only (1,101 interviews): from 23 August 2026 the form asks for a soft drink and an alcoholic drink separately, and those answers are not comparable with the old one. Excluded rows are not dropped for being inconvenient; they stay in the sheet and in every headline total.
B Structured but derived
Sound, but the structure is an editorial judgement. The method is defensible; the precision is not the point.
- Supply categories (19): the 1610 venue-linked dish records rolled into categories a distributor recognises, by a published keyword classifier. Boundaries are judgement calls, applied identically to every response and open to inspection.
- Venue voices tallies: keyword counts over the venue interviews (e.g. "venison" or "deer" counts as venison), one count per answer. The lexicon is in the build scripts.
- Operator voice and early signals: open answers coded into themes by keyword (an answer can count under more than one theme). Operator survey de-duplicated: one response was submitted twice, so n=54.
- Territories (24): venues grouped commercially rather than by postcode. Currently placeholders, to be replaced with real sales territories.
- Course per dish: Main 411 · Starter 409 · Side 290 · Dessert 277 · Drink 223. Inferred from the dish, not stated by the guest.
C Inferred: flag before using
Useful, but say "inferred" out loud before anyone else says "invented".
- Venue type: read from the venue name first, logged dishes second. 86 of 782 venues fall through to "Restaurant (general)" because nothing was decisive. Individual assignments are arguable.
- Nine venue locations were geocoded from general knowledge rather than the main geocoding pipeline: Celentano's, Lychee Oriental, Cafe Strange Brew, Dennistoun Bar-B-Que, Errol's Hot Pizza, Alma Mexicana, Bolt Burger, Ardnamurchan, Brutti Compadres. Verify before operational use.
- 38 venues added in the October 2026 update are placed at the centre of their postcode rather than the exact door, so pins can sit up to a street away. Addresses were checked against published listings.
- 30 well-known venues named in the interviews but missing from the address sheet are placed at postcode-district or town level and marked "Approximate location"; their pins have a dashed outline.
- 1,048 further names (1,293 mentions, most named once) have no confirmed address yet. They appear under the results when a search matches, with a "Find on map" lookup against OpenStreetMap. Chains, home cooking and countries are not counted as venues.
- 109 duplicate listings merged in October 2026: the same venue held under its short name and its full listing name at the same address (e.g. "LYLA" and "LYLA Restaurant & Rooms"). Dishes and counts were combined.
D Not ready: do not present
Venue-level mention ranking. The obvious headline, Scotland's most-recommended venues, is deliberately absent. The raw venue field currently holds the same venue under several spellings, so any ranking built on it today would not survive scrutiny. A deduplication tool exists and works; it has not yet been run against the full export with human review.
Movement over time and demand versus menu presence are supported by the data but not yet produced.
Questions this data invites
Is this representative of Scottish diners?
No, and it isn't trying to be. It is a self-selecting, food-literate audience: people who follow and post about food closely. That skew is deliberate: this group's preferences tend to surface in the wider market later. It is a leading-indicator panel, not a representative sample.
Is this sales data?
No. It is stated preference, gathered in a fantasy-menu framing. It does not measure what sold, what was ordered, or what appeared on menus. It is strongest read alongside sales data, not instead of it.
A category scored low. Does it not sell?
No. It means guests didn't volunteer it. Absence of mention is not absence of demand, and this matters most for unglamorous high-volume lines. Nobody's dream side dish is a bread roll.
Aren't the specials samples very small?
Yes. Fringe is 52 responses; cocktail and sandwich are smaller. That is why those sections show counts rather than percentages, because percentages on a base that size imply a precision the data does not have. Read them as direction only.
Is 54 operators enough?
It is a small base. One operator is worth 1.9 percentage points. Operator findings are stated as direction, never as precise shares.
How independent is this from its sponsor?
The sponsor has had no influence over methodology or findings. Questions covering beer and wine are a natural evolution for a food and drink interview series; they are open text, with no brand prompting and no supplier lists to choose from. The answers are whatever respondents say. That independence is precisely what makes the data commercially worth anything.
Can the underlying data be shared?
Aggregate outputs, yes. Raw responses, no. Participants consented to aggregated analysis, not to individual answers being passed to third parties.
What this data cannot say
That a share of Scots want something: it is the community, not the nation. That demand is proven: it is indicated. That any venue is the most popular, until the mention tally is run and reviewed. That sales of anything are rising: there is no sales data here. Any percentage on a base under about thirty without stating the base alongside it.

The dataset at a glance
Independent responses from Scotland's food community across four surveys: 1,175 dream-menu interviews, 64 venue interviews, 54 operator surveys and 52 Fringe responses. Dish and drink rankings use the 1,175 interviews. 97 of the venues are outside Scotland, from London and Manchester to Barcelona, Dubai and Singapore.
What the data says
Territory coverage
Mapped venues and dish records by commercial territory. Where coverage is thin, so is the interview pipeline: a target list, not just a gap.
